Banana Coconut Bread



Bambina Kitchenette is very happily holidaying on Waiheke Island.  We baked this banana coconut bread to fuel our bodies for water sports.  I think we will bake this in a mini loaf size on the counter in Ponsonby.



This recipe comes from Kelly Slater, one of the world's greatest surfers.

Mix together 3/4 tsp baking soda, 1/2 tsp salt, 3/4 cup ground almonds, 1/4 cup coconut flour.
Separately mix together 2 tbsp coconut oil*, 3 eggs, 2 mashed bananas, 1/4 cup honey**.  Combine dry and wet mix.  Pour into a greased loaf tin.  Bake at 175C for 25 mins or until golden and just cooked through.

* I used Ceres organic virgin coconut oil
** I used the same honey we use at Bambina, J.Friend and Co Health Blend
